Rocky Road Ice Cream

Ice-cream. I love ice-cream. :) And this ice cream is no exception. The chocolaty goodness, the crunchy pecans, the smooth marshmallow, all combines to create this amazing ice cream. It is perfect for a hot day, or even if you are feeling a little down. It is super easy to make, and well worth the wait if you decide to freeze it once before you eat it.

In a large saucepan mix 1/3 cup unsweetened cocoa powder, and 1 cup sugar.

Gradually stir in milk. Stir over low heat until sugar and cocoa dissolve. Let it cool to room temperature.

Add 1 tsp. vanilla extract...

A small pinch of salt...

And 2 cups whipping cream.

Place in a different container, and stir in 1/2 cup mini marshmallows.

1/2 cup mini semisweet chocolate chips...

And 1/2 cup chopped pecans. (You can also use almonds if you want)

Pour the mixture into the ice cream maker.

Let the ice cream maker go for about 20-25 minutes...

Or until desired consistency.

Us a spatula to scrape into a container, and either eat it right away, or let it freeze for a day. I found this recipe tastes better and has a more ice cream texture if we let it freeze in the freezer for a day.

And enjoy! This ice-cream already has stuff in it, so this is not really the ice cream to put sprinkles and stuff on. If you want one for that go to my other blog post French Vanilla Ice Cream
