I'm no vegetarian, but this vegetarian taco is awesome! :) It tastes amazing, spicy, and savory. You should try it out. Seriously. It's amazing. Cut up a small cauliflower head. Add to the cauliflower 2 tbsp. avocado oil (Or if you don't have avocado oil, use olive oil) Add 1 1/2 tsp. ground cumin, 1 tsp. chili powder, 1 tsp. paprika, and 1/2 tsp. salt to the cauliflower. Toss, and roast in a oven set to 400°F. Don't roast for too long, make sure they don't burn. Roast 1/4 cup almonds, and 4 cloves of non-peeled garlic. While cauliflower finishes roasting, add drained, fire-roasted tomatoes to a high-speed blender along with the almonds, roasted garlic (peeled), 2 cloves raw garlic (peeled), 2 tbsp. olive oil, 3 tbsp. lime juice, 1/4 tsp. paprika, 1/2 tsp. cumin, 1/4 tsp. salt, 1 tbsp. maple syrup, and 2 chipotle peppers in adobo sauce. Blend to create a sauce. Place the cauliflower on a corn taco, spread the roasted tomato sauce in the cauliflower, then sprinkle fresh cilantro and lime juice over the top, wrap like a taco, and enjoy! :) This is so yummy! If you are like me, and like more spicier stuff, then add more chipotle peppers in adobe sauce.
