Pecan Tarts

Pecan tarts. Delicious, bite sized pecan pies. They taste especially good fresh and warm with ice cream. Just a warning, this recipe did not make 36 like it says. It made 2 less than 2 dozen. So if you are making this for a large group, make more than double.

Start with 1/2 cup of brown sugar, 6 tbsp. of  butter (approx.. 1/2 of butter), an egg yolk, and a dash of vanilla.

Cream together until light and smooth.

Add 2 cups and 2 tablespoons of flour, 1/2 tsp. baking powder, and a pinch of salt.

Stir together until all is combined.

Take the dough, roll into 3/4 inch balls. Place into greased mini muffin tine.

Ina different bowl mix together half a cup of brown sugar...

A cup of chopped pecans, which is different from a cup of pecans, chopped...

And 1/4 cup heavy cream.

Stir it all together until...

It resembles this gooey, yummy, sugary mixture.

Place into the dough. Bake in an oven preheated to 350°F

Until all is yummy, delicious, golden brown bundles of sugary pecans with buttery crust. Perfect for desert, and snack, and just eating because they are just soooooo good! ☺

I do not have a picture of the finished product, mainly because I forgot, but also because my family decided to finish them up right away and eat them for breakfast.
