Chipotle Honey Chicken and Cornbread Waffle Sliders

Theses Chipotle Honey Chicken and Cornbread Waffle Sliders are AMAZING! Great for the whole family. You can spice up your waffle, and de-spice your kids waffles. The sweet and spicy of the chicken layered by the cornbread is a show you don't want to miss. And oh is it good to eat outside on a nice summer day. The best thing about these sliders is that they are super easy. Even the waffles don't have you beating the egg whites and folding them in. This recipe is a keeper!

Cornbread Waffles

Melt 1 cup of butter.

Once the butter is melted, remove from heat, then pour 2 cups of buttermilk in with it.
If you don't have buttermilk, just take 2 cups of milk, and 2 tsp. of lemon juice, and let it sit until the milk is a little curdy at the bottom.

Crack 4 large eggs, add them to the milk and buttermilk mixture.

And 1/2 cup of sugar.

In a large bowl mix 2 cups of all purpose flour...

3 cups of cornmeal...

And 1 tbsp. baking powder and 2 tsp. baking soda.

Mix wet ingredients with the dry until just barely mixed.

If you want more spicy, dice 1 jalapeno and mix with the batter.
Place 1/4 cup batter on the waffle iron. Remember these are sliders, not waffles, and don't need to be huge.

Chipotle Honey Chicken

Squeeze a lime. You should have about 1 tbsp. of lime juice.

In a small saucepan mix 1 cup of honey, 2 tbsp. of chipotle adobo, the lime juice, and 3 tbsp. of water.

Add 1 clove of pressed garlic, and 2 pinches of salt.

Let it all come to a boil. Bring heat to low, let simmer for 2 minutes.

Bake 8 crispy chicken burgers according to what it says on the package. Once they are nice and golden brown, remove from oven and coat with the honey chipotle sauce. Mmm... spicy.

Cut the chicken in half, and place between two cornbread waffles. If there is leftover sauce, and you want more spice, add some of the sauce on your slider.
