Don't worry, the muffins don't look like that after you bake them. I just forgot to take a pic of the finished product. But these muffins are super yummy, with a lot of lemon zest, and sweet strawberry. Just don't forget to put the baking powder in, or else your muffins won't rise. Yup, I am guilty of that. :) In a large bowl mix together 1/2 cup milk, 1/4 cup melted butter... Note: I did 2 different batches of muffins, one with sour cream, the other with milk. I don't know what the difference was, because like I said above, I forgot to put baking powder in the milk batch. And 1 egg. Zest a lemon (that means grate the zest/peel of the lemon) Juice the lemon, and add the juice to the milk and egg mixture. Lightly beat those together. In a separate bowl mix 1 cup all purpose flour... 3/4 cup whole wheat flour... 1/2 tsp. salt... 1 tsp. baking powder... 1/2 cup white sugar... 1/4 cup packed brown sugar... And the zest from the lemon. Mix it well. Now you add 1 cup cut up strawberries. Mix it until the strawberries are coated with the flour. Make a dugout in the middle of the flour, and pour the wet ingredients into it. Fold the wet stuff into the dry stuff, until just moist. Place the dough into muffin tins with muffin papers in them. Bake them in a oven preheated to 345° for about 20 minutes, or until a toothpick inserted in the centre of the muffin will come out clean.
Let them cool for about 10 minutes, then enjoy! :)
