This recipe is adapted from the recipe Gnarly Garlic Brussels from Jamie Oliver's new book. Only 5 ingredients.
Rinse the Brussel sprouts. Cut them in half and place them on a frying pan and grill the bottoms, don't grill anything except the bottom. Crush the pistachios. Mince the garlic. Add the garlic to the Brussel sprouts. Keep them bottom down, but stir around the garlic. Drizzle a bit of olive oil over it. And a dash or so of water. Let it cook for a little bit, then remove from heat. You want the pomegranate juice, so crush some of the seeds. Don't crush all of them, you'll need some later. Use a strainer to get all the juice. Take the cottage cheese out, and place two or three spoonful's on a plate. Spread it over the plate. Place the Brussel sprouts on the cottage cheese. Sprinkle the pistachios, pomegranates, pomegranate juice, and olive oil over the Brussel sprouts. This is such a colourful plate, with the green, pink, and yellow. The camera doesn't do it justice.
My parents said this tasted good, I wouldn't know because I didn't try it. :P I don't like cottage cheese or pomegranates. :)
