Gouda Bacon Puffs

These puffs are as delicious as... I don't know what. The cheesy, bacon filled flavour is so mouth watering. Then make it a puff, which is such a cute little thing, it is just awesome. Perfect for appetizers at a party, just make sure you keep your eyes on them, or else they will disappear before you've had some.

I doubled the recipe, but I didn't realize how much that would make. I needed a bigger container then I had used at the beginning. 1 recipe is enough for a decent sized party, so just cut what I tell you in half unless you are ready for the amount it makes.

Bring 2 cups of water, 1 cup of butter, and 2 pinches of salt to a boil.
Add 2 1/2 cups of flour all at once.

Mix it all well with a wooden spoon.

Beat in 8 eggs, one at a time.

Add in 2 cups shredded Gouda Cheese, 1/2 cup cooked chopped bacon (about 10 strips), and 1 tsp. minced fresh thyme.

Use a cookie scoop to make them into round balls. The recipe said to use a pastry bag fitted with a tip, but that didn't work so well.

Place them in an oven preheated to 400°F, bake for about 16 minutes, or until golden and crisp.

(If you want a little more bacon flavour, dipping them in the bacon fat is a nice way to do it)
