Ginger Bug

Really good. That is what this is. The ginger bug is a nifty little probiotic that makes super yummy drinks. It is the basis for homemade ginger ale, and homemade root beer.

Peel a hunk of ginger root.

Grate it until you have 2 heaping tablespoons of ginger.

Put the ginger into a medium sized mason jar, and add 1 tbsp. unrefined cane sugar and 2 tbsp. water.

Cover the jar and set on the counter. Repeat steps 1-3 every day for 5 days.

After 5 days, you can use it, or you can store it in your refrigerator, and repeat steps 1-3 once every week.

Ginger Tea

Here is one easy thing you can do with your ginger bug.

Make 4 cups of black tea.

Add 1/4 cup sugar. Let it cool to room temperature.

Strain and measure 1/4 of the juice from the ginger bug.

Whisk the ginger bug juice into the tea.

Pour into two 0.48 L jars.
(I used old Kombucha jars from Homesteaders)

Replace the 1/4 cup of ginger bug juice with 2 tbsp. sugar dissolved in 1/4 cup water.

Let the ginger tea set on the counter for 3-4 days. There should be fizz on the top. After 3-4 days, drink and enjoy like you would pop, or you can put them in the fridge for later. Enjoy! :)
