Cauliflower Casserole

Gooey, cheesy, bacon yumminess! This is a very unhealthy meal, so... it tastes delicious! It tastes great by itself, but also tastes good with mac and cheese, and plain old pasta.

NOTE: I will be making this recipe again, but with a few tweaks to make it more healthy. :)

Place 11-12 chicken thighs in a casserole dish. Leave the skin and bone on the chicken, you'll take it off later. Preheat the oven to 350° before you put the chicken into it. Bake for 65 minutes.

Also place a whole thing of bacon into another casserole dish.
(You can also use a frying pan to cook the bacon if you don't have 3 casserole dishes, because that is how many casserole dishes you will need for this recipe)
Place the casserole dish of bacon into the oven with the chicken thighs.
Depending on your bacon and oven, you will need to bake the bacon for between 25-60 minutes. Keep your eye on the bacon, and stop cooking when it is how you like it.

Take a head of cauliflower, cut and clean it.

Chop up 1 onion, then place it in a frying pan with butter.

Chop up about 10 stalks of green onions.

Shred some cheddar cheese, and some jalapeno monterey jack cheese together, until you have about 2 cups of shredded cheese.

You need 1/2 cup of heavy cream. Set that aside.

I like my onions and butter on the brown side. You can cook the onions to your standards. Add about 4 cloves of minced garlic. Fry it all together then remove from heat.

When your chicken is done cooking, take off all the skin, and remove the meat from the bones. (If you have cats you can give the bones to them. Don't give a dog chicken bones)

When the bacon is done, take it out and chop into smaller pieces.

Place the cauliflower in a small pot, add a little bit of water, and let the cauliflower steam cook.

In a medium/large bowl mix the cauliflower, chicken, and 8oz of cream cheese until the cream cheese is melted.

Now add half of your shredded cheese, chopped bacon, fried onions, and green onions. Mix it well.

Then add the heavy cream and mix.

Place in a well greased casserole dish, and spread the remaining cheese on the top. Cover with foil and bake in an oven set to 350°F for 25 minutes, then take off the foil and bake for 5 more minutes.
