Buffalo Chicken Balls

This is so good! I never really thought to make meatballs out of chicken, but these are amazing. I made them for my Dad's "Men's Night", and they ate them all! Perfect for an appy meal, or a games night.

Cut a celery, a carrot, and two green onions into big chunks.

Place them into a food processor, and dice 'em up!

Take 1 pound of lean ground chicken. (I never knew such a thing existed. It is true, you learn something new every day)

Add an egg.

Then the veggies...

1/2 cup panko bread crumbs...

1/2 tsp. garlic powder and 1/4 tsp. salt...

1/4 cup buffalo hot sauce (I used Frank's, but you can use whatever kind you like).

1 ounce crumbled blue cheese. (Didn't know this was a thing either. Apparently if you buy moldy cheese it doesn't hurt you. Hmm... :P )

Mix it all together!

Place on a baking sheet in 1 inch round balls. Bake in an oven preheated to 350°F for 20 minutes. Place on a serving dish.

In a small dish place 1 tbsp. butter together with 1/2 cup buffalo hot sauce. Microwave for about 30 seconds, or until the butter melts. Stir well, then drizzle over the chicken balls.

Serve and enjoy! :)
